Amazing Enchiladas



  • 1.5 lbs Ground Beef
  • 2 Cups Salsa, Divided
  • 10 oz Frozen Chopped Spinach, Thawed
  • 2 t Cumin
  • 1/2 t Salt
  • 8 oz Cream Cheese
  • 10 Large Flour Tortillas
  • 1 Can Diced Tomatoes
  • 1 Cup Shredded Cheddar
Optional Toppings
  • Sour Cream
  • Black Beans
Brown ground beef, drain. Add 1 cup salsa, spinach, 1.5 t cumin, salt. Cook 5 minutes. Add cream cheese and stir until melted. Remove from heat. Spoon mixture down the middle of each tortilla, roll up and place seam side down in greased 9x13. Combine tomatoes, 1 cup salsa, 1/2 t cumin then mix well. Spoon over enchiladas.

Bake at 350 for 20 minutes. Sprinkle with cheese then continue baking until cheese is melted.

Time: 30 minutes prep, 30 minutes baking time
